e caratteristiche del grano duro

Il grano duro ha un’estendibilità piuttosto bassa ma un’elevata tenacità ed è utilizzato per la pasta secca (semola a granuli grandi) e anche per la panificazione (semola a granuli più piccoli), in quantità ridotte e solitamente mischiata con la farina di grano tenero. Il grano duro contiene più proteine rispetto a quello tenero, assorbe più acqua e ha un elevato potere saziante.
